Winemaking Process:
The Chardonnay grapes were handpicked in the cool early hours of the morning to preserve their freshness. Transported to Stellenbosch in refrigerated trucks, the bunches underwent careful hand sorting and whole-bunch pressing. The juice was cold-settled for 36 hours before fermentation with premium Champagne yeasts, preserving the varietal’s vibrant character.

A secondary fermentation in the bottle created the signature fine mousse, followed by 24 months of aging on the lees, enhancing complexity and mouthfeel. The result is a wine of remarkable balance and refinement.

Tasting Notes:
Pale straw in color with a delicate blush, the Rosé Brut MCC presents a fine, persistent mousse. The nose delights with aromas of freshly cut green apples, citrus blossoms, lime zest, and hints of toasted brioche. On the palate, crisp citrus notes and subtle mineral undertones come together for a refreshing, clean finish.
